A few days ago I decided to get a little creative and found myself at Whole Foods dreaming about a recipe for simple braised beef short ribs. Looking up some recipes, they all looked kinda hard and labor intensive.
So, I decided to keep it simple. A little onion, a little garlic, some wine and broth… and voila! I wasn’t sure how it was going to turn out since most recipes are for 3-4 hours, but surprisingly they turned out tender and delicious! For this specific recipe I used the butternut squash puree as a sauce over gluten free pasta. I was pleasantly surprised.
This recipe for simple braised beef short ribs can also be served with just the butternut squash puree and a side of steamed veggies, over rice, or over pasta, or with potatoes. The remaining liquid can also be used as a sauce.
If you have never worked with short ribs, don’t worry this recipe is super simple! All I did to the ribs was salt and pepper them. They don’t need to marinated or over seasoned. I used a dutch oven for this recipe, but you can use a deep pot with a lid if you don’t have a dutch oven.
Beef short ribs are the most flavorful, tender, fall of the bone cut of meat. They are cut into 3-6 inch portions.
I chose to pair this recipe with butternut squash puree to not only balance out the meal, but to add a light flavor to this heavier meal. Butternut squash has a slightly sweet taste that pair well with this recipe. Even though this recipe is simply a few ingredients, the flavors are complex and bold.
